This makes a delicious healthy treat if you’re feeling a bit deprived of comfort foods. Believe it or not it’s dairy-free, grain-free, nut-free and sugar-free (apart from the cherries’ natural fruit sugar). I have used a baking version of natural sweetener, which combines stevia and erythritol, so you still get the sweetness without the bitterness of 100% stevia; I used the Natvia brand of baking mix.
You can use blueberries, blackberries or other berries if you prefer them to cherries.
Serves 6
INGREDIENTS:
½ cup tapioca flour
½ cup coconut flour
pinch Himalayan pink salt
1 ½ tsp baking powder
¼ cup Natvia Baking mix
5 dessertspoons coconut oil, melted
5 tbsp water
1 ½ cups frozen cherries
Coconut cream to serve (optional)
METHOD:
⦁ Preheat the oven to 180 deg C.
⦁ Grease a glass dish (or other) of roughly about 20 cm x 15 cm.
⦁ Line the bottom of the dish with the cherries.
⦁ In a large bowl, mix in the dry ingredients.
⦁ Add remaining wet ingredients and mix through. The mixture will appear quite dry.
⦁ Bake for around 30 mins until cake starts to brown on the top.
