This is really easy and quick to prepare and much cheaper than the paleo muesli that you can buy. You can get small amounts of each ingredients from a bulk store or health food store so costs are quite low.
Ideally, soak the muesli overnight in the fridge with whatever milk you are using. I use unsweetened coconut milk. You can also add raw buckwheat nibs to bulk it out if you want, but again I would recommend soaking overnight if you are going to do that.
INGREDIENTS – Makes around 3 servings
2 tbsp unsweetened shredded coconut
1 tbsp hazlenuts, chopped
1 tbsp sunflower seeds
1 tbsp pepitas (pumpkin seeds)
1 tbsp cacao nibs
2 tsp sesame seeds
¾ tsp ground ginger
¾ tsp ground cinnamon
½ tsp vanilla powder
METHOD
Mix together and store in a glass jar in the fridge.
