This easy recipe is great for boosting bile and digestive enzyme production to help you digest comfortably and get the most nutrients out of your meals. It is also packed with polyphenols, great for feeding the microbiome. This is best eaten as a starter to your main meal.
Ingredients
Serves 2
3 handfuls of rocket
1 handful of radicchio leaves (optional)
1/2 small avocado chopped or sliced
2 tbsp extra virgin olive oil
squeeze of lemon juice
salt and pepper to taste
1 tbsp pine nuts
1 tbsp shaved parmesan
Method
Add rocket, radicchio and avocado to a salad bowl.
Mix in avocado.
Prepare dressing by whisking together olive oil, lemon juice and seasoning.
Toss dressing through salad.
Top with pine nuts and parmesan and serve.
