Low-fodmap carrot cake bliss balls

This recipe provides a very low sugar treat, generally easily tolerated if you have SIBO, IBS or other gut issues. Stick to the serving size to keep the ingredients to within low-fodmap limits.


Makes 20 balls

Serving size 2 balls


Ingredients

  • 1 cup firmly packed grated carrot (about 1.5 to 2 carrots)


  • 1 cup chopped walnuts


  • 1 cup finely shredded coconut (unsweetened)


  • 2 tbsp peanut butter


  • Zest from 1 orange


  • 1 1/2 tbsp maple syrup


  • 2 tbsp coconut oil


  • Pinch of salt


  • ½ tsp mixed spice


Method


  1. In a large bowl mix together all ingredients.


  2. Using your hands, make balls pressing the mix together as much as you can. The balls will be slightly crumbly until set.


  3. Add balls to a dish or baking tray and set in the fridge of freezer.
