Low-fodmap vegan tofu dip

If you are looking to boost your daily veggie intake, this creamy low-fodmap vegan tofu dip is the perfect companion for your vegetable sticks. Packed with plant-based protein, it is a very easy, practical snack or meal addition for anyone navigating a SIBO or IBS protocol on a vegan diet.
Makes 2 servings
N.B. If you are in the restricted phase of the SIBO Bi-phasic diet, reduce portions to one third of the total.
Ingredients
250 g firm tofu
2 tbsp olive oil
1.5 tbsp lemon juice
1 tsp lemon zest
1-2 tbsp water
salt and pepper
pinch paprika
1/2 cup fresh herbs
1.5 tbsp spring onion - green part only
Method
Wrap the tofu in a clean tea towel and squeeze out as much liquid as possible.
Crumble tofu into a medium bowl or blender beaker.
Add all ingredients except the water. To make blending easier add liquid ingredients to the bowl or beaker first.
Blend and add the water gradually until you get to a dip consistency (you may not need all of it).
